Hot sauce aroma hits you upon opening. A medium textured fish, fish holds its shape well while removing from tin. Sauce hits you on the first bite. The Tapatio hot sauce pairs excellent with the sardines. Being tinned with the sauce is different than just adding the sauce; it's better. A nice lingering heat. Not a spiny fish. In a world (just here in the states) of sardines in Louisiana-style hot sauces, this is its own class. Even if you're not a King Oscar fan, these are worth trying. 5 Sardines

PRICE:

OVERALL:
A strong pepper aroma upon opening. The flavor of the fish attempts to come out on the first bite, it is quickly knocked down with a burst of pepper  KO, is not stingy with the pepper; a very nice heat to this tin, pepper really overpowers the fish, while just eating them from the tin; these would be killer in a dish of sorts. No fishy taste or after, just the lingering heat and taste of pepper. as much as I like this tin, I don't see it making it; it's too spicy for the average sardine eater. ( Based on comments and e-mails I receive on spicy sardines) When these become more readily available in the market, locale, I will stockpile these guys. I give these guys 5 sardines.

Appearance is very off-putting. After digging around the mustard to find a sardine, there really is not much flavor at all, actually a bland-tasting fish, with the mustard. About ten to eleven sardines to a tin, hard to tell actually, fish crumbled as I stirred around the thick mustard in search of fish. All appeared to possess their tails. Would not eat again. One sardine

PRICE: $3.00

OVERALL:
No odor upon opening, very damn good-looking tin of sardines. The first bite is a little off-putting. The extra virgin Olive oil, it has and adds a green, almost bitter taste. Sort of a bad citrus flavor, no fishy taste, no after taste. Fish a little on the soft side; all still possessed their tails. I'm a little disappointed in these fish. Truly can't judge a tin by its opened cover. 3 sardines. (Revisit: 12/04/2014, the oil was not as green, a faint bitterness is detected.  "Olive oil is much like wine, good and bad years". Fish had a better texture, a slight oil after taste, not overpowering. I'll give these guys 4 1/2 sardines this round. ) I have been aging a case of these sardines for three years now, flipping them occasionally. They are extremely delicious, no bitterness or green taste. Aged sardines are the way to go if you are patient enough. The French are big on aging sardines like a fine wine; it does matter.
